Jam Drops

Ingredients:
125g butter
½ cup sugar
1 eggs, lightly beaten
1 teaspoon vanilla
1 ½ cup self raising flour
Jam flavours
 
Beat butter, sugar, egg and vanilla in mixing bowl. Sift flour and mix well. Roll into small balls and gently indent each biscuit with the end of a wooden spoon. Place a jam drop into each indent. Bake in oven at 180°C/350°F for 10 – 15 minutes or until lightly browned.

Week 9: Recipes

Roly Poly

Ingredients:
1 cup self-raising flour
1 tablespoon butter
Enough milk to mix
Pinch of salt
½ cup jam, you choose the flavour
Syrup Topping:
½ cup sugar
1 tablespoon butter
1 cup hot water
 
Rub flour and butter until it looks like fine breadcrumbs. Add pinch of salt and enough milk to mix until it turns into dough.  Roll out flat and spread the jam over the base then roll into a log. Place in an oven proof dish. Combine sugar, butter and water together in a bowl then pour on top of the log. Bake in moderate oven (180°C/350°F) for 30-40 minutes or until golden brown. 
 
Hint: For all your Canadians out there, if you don’t have any self-raising flour in your home, this is how you make it from All Purpose Flour. Add 1½ teaspoon baking powder & ½ teaspoon of salt.
