Week 47: Recipes

Jam Drops

Ingredients:
125g butter
½ cup sugar
1 eggs, lightly beaten
1 teaspoon vanilla
1 ½ cup self raising flour
Jam flavours
 
Beat butter, sugar, egg and vanilla in mixing bowl. Sift flour and mix well. Roll into small balls and gently indent each biscuit with the end of a wooden spoon. Place a jam drop into each indent. Bake in oven at 180°C/350°F for 10 – 15 minutes or until lightly browned.

Week 16: Recipes

Chocolate Chip Cookies

Ingredients: 
190g butter
½ cup sugar
1/3 tin condensed milk
1 ½ cup self raising flour
1 ½ cup chocolate chip bits
1 teaspoon vanilla
 
Cream butter and sugar then add condensed milk. Fold in flour, chocolate chips and vanilla. Mix well. Drop by teaspoon onto lined baking tray. Bake  in oven at 150°C/300°F for 15 to 20 mins until a light golden brown.
 
 
I grew up with this recipe… in fact, I think we probably had these cookies in our house almost everyday! I don’t know where my mum got this recipe from, because it’s not your typical chocolate chip cookie recipe, but it’s a winner. I hope you enjoy making them – oh, and by the way, they taste really good as frozen cookie dough balls! 

Week 13: Recipes

Yo-Yo’s

Ingredients: 
190g butter
65g icing sugar
250g flour
60g custard powder
Pinch salt
Filling:
½ cup icing sugar
1 teaspoon custard powder 
2 tablespoons butter, melted
½ teaspoon vanilla
 
Cream butter and icing sugar. Mix in flour, custard powder and salt. Roll into balls and place on baking tray. Flatten tops of balls with fork to make biscuits. Bake  in oven at 150°C/300°F for 15 to 20 mins.  Mix icing sugar, custard powder with the butter and vanilla. Join two biscuits together with the icing. To make a white icing – just mix icing sugar with water.
